Tea Fruit Cake is a typically Irish loaf that is hearty and filling. It is great alone, with butter or toasted lightly. Ideal with tea.
Recipe Ingredients
- 2 cups Flour
- 1 1/2 cup Chopped Walnuts
- 1 cup Raisins
- 1 cup Currants (Dried)
- 1 cup Demerera Brown Sugar
- 3/4 cup Orange Juice
- 3/4 cup Cherries (Dried)
- 3/4 cup Apricots (Dried)
- 3/4 cup Brandy
- 1 tbl Baking Powder
- 1 tsp Cinnamon
- 1/2 tsp Allspice
- 1/2 tsp Nutmeg
- 2 Eggs
- Butter
- Lemon Zest

How To Make
- Using a large mixing bowl, add together the currants, cherries, raisins, lemon zest, apricots, walnuts and brandy. Mix thoroughly and leave for 24 hours.
- Take an electric mixer and cream the brown sugar and butter until light and quite fluffy. Add the eggs and mix well.
- Mix the fruit in with the liquid and gradually add in the orange juice and brandy.
- Spoon the mixture into a loaf pan, which has been gresed and floured lightly.
- Place in a preheated oven at 350 F for about an hour and a half.
