Tea Fruit Cake is a typically Irish loaf that is hearty and filling. It is great alone, with butter or toasted lightly. Ideal with tea.

Recipe Ingredients

  • 2 cups Flour
  • 1 1/2 cup Chopped Walnuts
  • 1 cup Raisins
  • 1 cup Currants (Dried)
  • 1 cup Demerera Brown Sugar
  • 3/4 cup Orange Juice
  • 3/4 cup Cherries (Dried)
  • 3/4 cup Apricots (Dried)
  • 3/4 cup Brandy
  • 1 tbl Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Allspice
  • 1/2 tsp Nutmeg
  • 2 Eggs
  • Butter
  • Lemon Zest

How To Make

  1. Using a large mixing bowl, add together the currants, cherries, raisins, lemon zest, apricots, walnuts and brandy. Mix thoroughly and leave for 24 hours.
  2. Take an electric mixer and cream the brown sugar and butter until light and quite fluffy. Add the eggs and mix well.
  3. Mix the fruit in with the liquid and gradually add in the orange juice and brandy.
  4. Spoon the mixture into a loaf pan, which has been gresed and floured lightly.
  5. Place in a preheated oven at 350 F for about an hour and a half.
