This is one of our favourites! Rhubarb Cake, heated, a dollup of whipped cream and sprinkling of sugar - just beautiful! It is perfect, and we do mean perfect, with coffee or tea.
Recipe Ingredients
- 2 cups Flour
- 2 cups Brown Sugar
- 2 cups Rhubarb (Chopped Finely)
- 1 cup Soured Cream
- 1 cup Shortening Liquid
- 1/2 cup Pecan Nuts (Chopped)
- 1 tbl Butter
- 1 tbl Baking Soda
- 1 tsp Cinnamon
- 1 Large Egg

How To Make
- In a bowl, mix together the shortening liquid and the sugar until creamed.
- Then add in the egg, baking soda, flour, salt and sour cream.
- While stirring the mixture, fold in the rhubarb gently.
- Pour out into a greased baking dish.
- Mix together 1/4 cup of brown sugar, 1/2 cup of finely chopped pecan nuts, a tablespoon of butter and a teaspoon of cinnamon. Add this to the top.
- Place in a preheated oven at 350 F for up to an hour to bake.
