This is one of our favourites! Rhubarb Cake, heated, a dollup of whipped cream and sprinkling of sugar - just beautiful! It is perfect, and we do mean perfect, with coffee or tea.

Recipe Ingredients

  • 2 cups Flour
  • 2 cups Brown Sugar
  • 2 cups Rhubarb (Chopped Finely)
  • 1 cup Soured Cream
  • 1 cup Shortening Liquid
  • 1/2 cup Pecan Nuts (Chopped)
  • 1 tbl Butter
  • 1 tbl Baking Soda
  • 1 tsp Cinnamon
  • 1 Large Egg

How To Make

  1. In a bowl, mix together the shortening liquid and the sugar until creamed.
  2. Then add in the egg, baking soda, flour, salt and sour cream.
  3. While stirring the mixture, fold in the rhubarb gently.
  4. Pour out into a greased baking dish.
  5. Mix together 1/4 cup of brown sugar, 1/2 cup of finely chopped pecan nuts, a tablespoon of butter and a teaspoon of cinnamon. Add this to the top.
  6. Place in a preheated oven at 350 F for up to an hour to bake.
