Check out this great Pecan Coffee Cake recipe! It is simple and easy to make, but wonderfully full bodied, sticky and moist. Hints of vanilla and that smooth pecan flavour pervade. The Pecan Coffee Cake is a top favourite for after a dinner, and goes down perfectly with freshly roasted coffee, or a brewed tea.

Recipe Ingredients

  • 3/4 cup Vegetable Oil
  • 3/4 cup Water (Cooled)
  • 1/2 cup Pecan Nuts (Chopped)
  • 1 tsp Vanilla Extract
  • 4 Large Eggs
  • 1 Yellow Cake Mix
  • 1 Valilla Pudding Mix

How To Make

  1. Take a mixing bowl and combine the vanilla pudding mix, yelow cake mix, vegetable oil, vanilla extract and water.
  2. Then add the eggs to the mixture, one at a time, while stirring until really well blended.
  3. Pour in all of the batter and smooth out. Sprinkle on the pecan nuts.
  4. Place in a preheated oven at 350 F for about an hour, until baked.
  5. Serve with freshly whipped cream, coffees and teas.
