Lemon Velvet Cake is just great in the summer months for a light and refreshing snack mid-afternoon. It is wonderfully sweet and absolutely delicious. This Lemon Velvet Cake recipe is sweet, with plenty of fruity taste!
Recipe Ingredients
- 2 1/2 cups Flour
- 1 1/2 cup Sugar
- 1/3 cup Water
- 1/2 cup Butter
- 1/4 cup Orange Juice
- 3 tbl Lemon Juice
- 3 tsp Baking Powder
- 1 tsp Lemon Zest
- 1/2 tsp Orange Rind (Grated)
- 1/2 tsp Salt
- 3 Large Eggs

How To Make
- Take a large mixing bowl and combine the flour, salt and baking powder.
- In a separate bowl, cream the butter. Add the eggs and sugar, whisk until smooth.
- Using a small bowl, combine the lemon and orange juice with the water. Then add the other 2 mixtures and mix well until smooth and lump free.
- Turn onto a greased cake pan.
- Bake in a preheated oven at 350 F for about half an hour.
- You can make a quick glaze for the top of the Lemon Velvet Cake by mixng together a couple tablespoons of butter, some water, lemon juice, sugar and vanilla.
