Sweet and delicate tasting, Lemon Cake is a perfect light snack during the day or with lunch. Slice it up, slap on some butter and enjoy with a mug of freshly roasted coffee or a pot of Irish tea.

Recipe Ingredients

  • 2 cups Flour
  • 1 1/4 cups Sugar
  • 2/3 cup Vegetable Oil
  • 1 tin Lemon Cake Filling
  • 1 1/2 tsp Cinnamon
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 4 Large Eggs

How To Make

  1. In a bowl, combine the vegetable oil with 1 cup of sugar and mix together well.
  2. Add the eggs and lemon cake mix, stirring gently.
  3. Now add in the baking powder, flour and salt. Mix thoroughly.
  4. While stirring the mixture, fold in the rhubarb gently.
  5. Pour out into a greased baking dish.
  6. Spread some of the lemon cake mix over the top, along with the cinnamon and the rest of the sugar.
  7. Place in a preheated oven at 350 F for about half an hour until browned.
