Sweet and delicate tasting, Lemon Cake is a perfect light snack during the day or with lunch. Slice it up, slap on some butter and enjoy with a mug of freshly roasted coffee or a pot of Irish tea.
Recipe Ingredients
- 2 cups Flour
- 1 1/4 cups Sugar
- 2/3 cup Vegetable Oil
- 1 tin Lemon Cake Filling
- 1 1/2 tsp Cinnamon
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 4 Large Eggs

How To Make
- In a bowl, combine the vegetable oil with 1 cup of sugar and mix together well.
- Add the eggs and lemon cake mix, stirring gently.
- Now add in the baking powder, flour and salt. Mix thoroughly.
- While stirring the mixture, fold in the rhubarb gently.
- Pour out into a greased baking dish.
- Spread some of the lemon cake mix over the top, along with the cinnamon and the rest of the sugar.
- Place in a preheated oven at 350 F for about half an hour until browned.
