Currant Cake is perfect for a light snack in the afternoon, or a little later with tea and coffee. Currant Cake is easy to make and a real pleasure to eat.
Recipe Ingredients
- 2 cups Flour
- 1 cup Sugar
- 1 cup Currants
- 1/2 cup Milk
- 1/2 cup Butter
- 4 tsp Baking Powder
- 1/2 tsp Salt
- 3 Large Eggs

How To Make
- In a mixing bowl, mix together the sugar and butter until they reach a creamy consistency.
- Add in the beaten eggs and milk, stirring continuously.
- With a sieve, sift in the flour gradually. Also add the salt and currants, mixing thoroughly.
- Put the mix into a loaf pan and butter the top to glaze.
- Place in a preheated oven at a medium heat for approximately three quarters of an hour, or until baked.
- Serve fresh and heated from the oven. Best enjoyed with plenty of spread and your favourite jam!
