Currant Cake is perfect for a light snack in the afternoon, or a little later with tea and coffee. Currant Cake is easy to make and a real pleasure to eat.

Recipe Ingredients

  • 2 cups Flour
  • 1 cup Sugar
  • 1 cup Currants
  • 1/2 cup Milk
  • 1/2 cup Butter
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 Large Eggs

How To Make

  1. In a mixing bowl, mix together the sugar and butter until they reach a creamy consistency.
  2. Add in the beaten eggs and milk, stirring continuously.
  3. With a sieve, sift in the flour gradually. Also add the salt and currants, mixing thoroughly.
  4. Put the mix into a loaf pan and butter the top to glaze.
  5. Place in a preheated oven at a medium heat for approximately three quarters of an hour, or until baked.
  6. Serve fresh and heated from the oven. Best enjoyed with plenty of spread and your favourite jam!
