Cherry Cake is simply devine, you'll love it! Induldge with big thick slices, plenty of butter and a hearty cup of your favourite Irish tea!

Recipe Ingredients

  • 1 1/2 cups Flour
  • 3/4 cup Sugar
  • 1/2 cup Butter
  • 1/3 cups Milk
  • 2 cups Walnuts (Chopped)
  • 2 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 Large Eggs
  • 1 lb Cherries (Pitted)

How To Make

  1. Using a bowl, mix the baking powder, salt and flour together.
  2. In a separate bowl, beat together the eggs, lemon and sugar until a think consistency. Then add in the milk, melted butter and vanilla. Stir well.
  3. Fold in the pitted cherries, saving a handful for the top of the cake.
  4. Pour the mixture into a greased loaf pan and level out.
  5. Cut the leftover cherries in half and place on the top of the cake.
  6. Place in a preheated oven at 350 F for about 45 minutes.
  7. Serve up warm with plenty of butter and jam!
