This Blueberry Cake Recipe will give you a quick, simple and easy way to get the perfect Blueberry Cake. Serve up with butter and jam, or fresh cream and some gourmet tea!
Recipe Ingredients
- 1 1/2 cups Flour
- 1 1/2 cups Blueberries
- 1 cup Sugar
- 1/3 cup Hot Water
- 3 Large Eggs
- 1/2 tsp Salt

How To Make
- Take a medium sized bowl and beat the eggs, mixing them with the salt.
- Lift the bowl into larger bowl, filled with the hot water. Then whisk up the mixture until light and fluffy.
- Add the sugar gradually, mixing all the time until all the sugar is incorporated. Then lift the bowl out of the hot water.
- Sieve in all the flour gradually, whilst gently stirring and mixing.
- Add the blueberries, taking care to fold them into the mixture.
- Pour the mixture into a greased loaf pan and level out.
- Place in a preheated oven at about 350 F until baked.
- Serve up warm with plenty of butter and jam or a dollup of fresh cream!
