This Blueberry Cake Recipe will give you a quick, simple and easy way to get the perfect Blueberry Cake. Serve up with butter and jam, or fresh cream and some gourmet tea!

Recipe Ingredients

  • 1 1/2 cups Flour
  • 1 1/2 cups Blueberries
  • 1 cup Sugar
  • 1/3 cup Hot Water
  • 3 Large Eggs
  • 1/2 tsp Salt

How To Make

  1. Take a medium sized bowl and beat the eggs, mixing them with the salt.
  2. Lift the bowl into larger bowl, filled with the hot water. Then whisk up the mixture until light and fluffy.
  3. Add the sugar gradually, mixing all the time until all the sugar is incorporated. Then lift the bowl out of the hot water.
  4. Sieve in all the flour gradually, whilst gently stirring and mixing.
  5. Add the blueberries, taking care to fold them into the mixture.
  6. Pour the mixture into a greased loaf pan and level out.
  7. Place in a preheated oven at about 350 F until baked.
  8. Serve up warm with plenty of butter and jam or a dollup of fresh cream!
