Rye Bread is an old favourite. It is the perfect accompaniment with soup, cheese or stews. Why not try it with a big pot of Irish stew and a cup of the finest Irish tea?

Recipe Ingredients

  • 4 cups All-purpose Flour
  • 2 cups Rye Flour
  • 2 cups Milk (scalded)
  • 1/4 cup Water (Warmed slightly)
  • 2 tbl Salt
  • 2 tbl Sugar
  • 2 tbl Butter
  • 1 tbl Carraway Seeds
  • 1 Large Egg White
  • Active Dry Yeast

How To Make

  1. In a bowl, mix together the teast and lukewarm water.
  2. Take another bowl and combine the milk, sugar and salt. Stir thoroughly.
  3. Now add the yeast to the mixture. Stir in the carraway seeds and add enough rye flour to make a soft dough.
  4. Put the dough into a baking tin and let it rise in a warm place until about doubled in volume. Sprinkle the top generously with more carraway seeds. Brush liberally with oil.
  5. Place in a preheated oven at 400 F for about three quarters of an hour, or until baked.
