Potato bread is a firm favourite in Ireland and is perfect in a traditional Irish breakfast. This recipe will allow you to knock up a few slices of this lovely bread in no time!
Recipe Ingredients
- 4.5 lbs potatos
- 1.5 cups boiled potato water
- 4.5 lbs flour
- 4 tbl dry yeast
- 3 tbl salt, for seasoning
- 2 tbl olive oil

How To Make
- Peel the skins off the potatos, place in a large saucepan and boil until soft.
- Remove the potatos and let them cool. Keep the water for later.
- Add the yeast to the water, stirring it in. Leave it for a few minutes.
- Now mix together the cooled potatos, yeast and olive oil thoroughly. Cover the mixture and leave for half an hour.
- Add the flour and seasoning according to your own taste and kneed together until it reaches a bready dough.
- Make your loaves and let them sit for up to an hour before placing in an oven at 350 Celcius for about 45 minutes.
- Slice and serve. Great for a hearty breakfast!
