Potato bread is a firm favourite in Ireland and is perfect in a traditional Irish breakfast. This recipe will allow you to knock up a few slices of this lovely bread in no time!

Recipe Ingredients

  • 4.5 lbs potatos
  • 1.5 cups boiled potato water
  • 4.5 lbs flour
  • 4 tbl dry yeast
  • 3 tbl salt, for seasoning
  • 2 tbl olive oil

How To Make

  1. Peel the skins off the potatos, place in a large saucepan and boil until soft.
  2. Remove the potatos and let them cool. Keep the water for later.
  3. Add the yeast to the water, stirring it in. Leave it for a few minutes.
  4. Now mix together the cooled potatos, yeast and olive oil thoroughly. Cover the mixture and leave for half an hour.
  5. Add the flour and seasoning according to your own taste and kneed together until it reaches a bready dough.
  6. Make your loaves and let them sit for up to an hour before placing in an oven at 350 Celcius for about 45 minutes.
  7. Slice and serve. Great for a hearty breakfast!
