A perfect accompaniment to a fresh brew of Barry's Irish Tea! Also ideal for eating along side a main course such as Shepherd's Pie or Irish Stew.
Recipe Ingredients
- 6 oz Soft Brown Sugar
- 1 oz Melted Butter
- 12 T Strong Irish Loose Tea
- 1 lb. Dried Mixed Fruit (Raisins, Currants, Oranges)
- 1 ea Lightly Beaten Egg
- 9 oz All-purpose Flour
- 1/2 T Bicarbonate of Soda

How To Make
- Place the dried mixed fruit, loose tea and sugar in a bowl. Cover and leave overnight.
- Stir in the melted butter and the egg.
- Sieve the flour and the bicarbonate of soda together and gently fold them into your mix.
- Line the bottom of a large loaf pan with grease proof baking paper, then brush all the insides of the pan with melted butter.
- Now pour in the mixture and smooth off the top.
- Preheat your oven to 360 F / 182 Celcius and bake for 1 1/2 hours.
- Remove the pan from the oven and take the loaf out. Let it sit and cool off on a wire rack.
