Carrot Bread Recipe

Carrot bread is a moist bread, bordering on being a cake. It's fantastic with tea or coffee, a lovely way to snack in the afternoon.

Recipe Ingredients

  • 2 cups of flour
  • 1 cup of pecan pieces
  • 1 cup of sour cream
  • 1 cup of coconut
  • 1 cup of grated carrots
  • 1 slab of butter
  • 2 eggs
  • 1 tbl sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

How To Make

  1. Mix the butter, sugar, salt and eggs together until thickened, then add the cinnamon, vanilla and sour cream.
  2. Mix in the flour thoroughly and add the coconut, pecan nuts and your grated carrots.
  3. Place in a loaf pan and put in a preheated oven at 350 F for approximately 1 hour.
  4. Slice it up, sit back and enjoy!
